These cabbage rolls are incredibly easy to make and packed with flavor. Tender cabbage leaves wrap around a deliciously seasoned vegetable filling, making them a healthy and satisfying meal. Whether you serve them as a main dish or a side, they are sure to impress with their taste and simplicity.

For the Filling:

  • 1 cup boiled potato, mashed
  • 2 tbsp capsicum, finely chopped
  • 2 tbsp grated carrot
  • 2 tbsp onion, finely chopped
  • ½ tsp green chili, finely chopped
  • ½ tsp coriander powder
  • ½ tsp salt
  • 1 tbsp coriander leaves, chopped

For the Cabbage Rolls:

  • 68 large cabbage leaves
  • 1 tbsp oil
  • 1 tsp garlic, minced
  • ½ cup tomato puree
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ¼ cup water

Instructions

  • Bring a pot of water to a boil and blanch the cabbage leaves for about 2 minutes until they are soft. Drain and set aside.
  • In a mixing bowl, combine mashed potatoes, capsicum, carrot, onion, green chili, coriander powder, salt, and coriander leaves. Mix well.
  • Take a cabbage leaf and place 2 tablespoons of filling at one end. Roll tightly, folding the sides in to secure the filling. Repeat for all leaves.
  • Heat oil in a pan and sauté the garlic until fragrant. Add tomato puree, black pepper, salt, and water, then simmer for 5 minutes.
  • Place the cabbage rolls in the pan, cover, and cook on low heat for 10 minutes, allowing the flavors to blend.
  • Remove from heat and serve warm, garnished with fresh coriander leaves.

Notes

  • To make this dish spicier, add extra green chilies or a pinch of red pepper flakes.
  • For added protein, mix in cooked lentils or crumbled paneer into the filling.
  • These rolls can be prepared in advance and stored in the refrigerator for up to 3 days.
  • Serve with a yogurt dip or a side of rice for a complete meal.
