Ingredients

Scale

For the Potatoes:

  • 4 medium potatoes (Russet or Yukon Gold)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ¼ cup Parmesan cheese (grated)
  • 1 tablespoon fresh parsley (chopped, for garnish)

For the Cheese Sauce:

  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1 cup cheddar cheese (shredded)
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

1. Prepare the Potatoes

Preheat oven to 400°F (200°C). Cut the potatoes into wedges or cubes and toss them with olive oil, minced garlic, salt, black pepper, and paprika. Spread evenly on a baking sheet and bake for 35–40 minutes, flipping halfway through, until crispy and golden brown.

2. Make the Cheese Sauce

In a saucepan over medium heat, melt the butter and stir in the flour. Cook for 1 minute, then gradually whisk in the milk until smooth. Add shredded cheddar, garlic powder, salt, and black pepper, stirring until the cheese is fully melted and the sauce is creamy.

3. Serve and Enjoy

Drizzle the warm cheese sauce over the crispy potatoes or serve it on the side for dipping. Garnish with grated Parmesan and fresh parsley for extra flavor.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before baking, then pat them dry.
  • Try adding a pinch of cayenne pepper or smoked paprika for a spicy twist.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 375°F (190°C) to restore crispiness.
  • Cheese sauce can be made ahead of time and reheated over low heat, adding a splash of milk to maintain its creamy texture.
  • To make this recipe even more indulgent, top with crispy bacon bits or caramelized onions.
