This Golden Potato & Cheese Wrap is a delicious, quick, and healthy breakfast option for the whole family. Ingredients

  • Potatoes: 2 medium, peeled and diced
  • Water: Enough to boil the potatoes
  • Green Onions: 2-3 stalks, chopped
  • Frozen Green Peas: 1 cup (about 150 g)
  • Mozzarella Cheese: 100 g (about 3.5 oz), grated
  • Tortillas: 2 large
  • Salt: to taste
  • Black Pepper: to taste

Instructions

  1. Boil the Potatoes: Add the diced potatoes to a pot of boiling water and cook until they are soft and easily mashable. Drain and transfer to a bowl.
  2. Prepare the Filling: Mash the potatoes slightly, then mix in the chopped green onions, green peas, salt, and black pepper. Stir well.
  3. Add the Cheese: While the mixture is still warm, fold in the grated mozzarella cheese until evenly combined.
  4. Assemble the Wraps: Place a tortilla on a flat surface and spread half of the potato mixture evenly over one side. Fold the tortilla in half to form a wrap. Repeat with the second tortilla.
  5. Cook the Wraps: Heat a non-stick pan over medium heat. Place the wraps in the pan and cook for 2–3 minutes per side, until golden brown and crispy.
  6. Serve Hot: Slice the wraps into halves or quarters and enjoy while warm!
