Ingredients

Scale

For the Rolls:

  • 500600g pumpkin, peeled and cubed
  • ½ tsp dried garlic
  • ½ tsp black pepper
  • 1 tsp paprika
  • 20g flour
  • Salt to taste
  • 1 tbsp olive oil
  • 2 tbsp sesame seeds

For the Sauce:

  • 200g Greek yogurt
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • Dill to taste
  • Salt to taste

Instructions

  • Prepare the Pumpkin: Peel and cut the pumpkin into cubes. Roast in a preheated oven at 375°F (190°C) for 25–30 minutes until tender.
  • Mash & Mix: Mash the roasted pumpkin and mix it with flour, dried garlic, black pepper, paprika, and salt until a soft dough forms.
  • Shape the Rolls: Form small rolls from the mixture and coat them with sesame seeds.
  • Bake the Rolls: Place them on a lined baking sheet and bake at 375°F (190°C) for 15–20 minutes until golden and firm.
  • Prepare the Sauce: In a bowl, combine Greek yogurt, minced garlic, olive oil, dill, and salt. Mix well.
  • Serve & Enjoy: Let the pumpkin cheese rolls cool slightly, then serve warm with the garlic-yogurt sauce.

Notes

  • Roasting Alternative: If short on time, steam the pumpkin instead of roasting, but roasting enhances the flavor.
  • Baking Tip: Flip the rolls halfway through baking for even crispiness.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Freezing: Freeze before baking, then bake directly from frozen at 375°F (190°C) for 20–25 minutes.
  • Customization: Add grated cheese for extra richness or sprinkle with fresh rosemary for more aroma.
