Scale

For the Dough:

  • 300g (2 cups) flour
  • 30g (2 tablespoons) sugar
  • 1 teaspoon baking powder
  • 8g (1 teaspoon) vanilla sugar
  • 150g (2/3 cup) cold butter, cubed
  • 1 egg

For the Filling:

  • 5 medium-sized apples (850-900g), cored and cubed
  • 120g (1/2 cup + 1 tablespoon) sugar
  • 2 tablespoons honey
  • 35g (1.5 tablespoons) butter
  • 50g roasted walnuts, chopped

For the Meringue:

  • 4 egg whites
  • A pinch of salt
  • 170g (3/4 cup + 1 tablespoon) sugar

Instructions

  • Prepare the Dough:

    • In a mixing bowl, combine the flour, sugar, baking powder, and vanilla sugar.
    • Add the cold butter and mix until the texture resembles coarse crumbs.
    • Incorporate the egg and knead until a smooth dough forms. Wrap in plastic wrap and chill for 30 minutes.
  • Make the Apple Filling:

    • In a pan over medium heat, melt the butter.
    • Add the apples, sugar, and honey. Cook for 5-7 minutes until the apples soften and release their juices.
    • Stir in the roasted walnuts and set the mixture aside to cool.
  • Assemble the Pie:

    • Preheat the oven to 180°C (350°F).
    • Roll out the chilled dough and press it into a greased baking pan, forming an even base.
    • Spread the apple filling over the dough and bake for 25-30 minutes until the crust turns golden.
  • Prepare the Meringue:

    • While the pie is baking, beat the egg whites with a pinch of salt until foamy.
    • Gradually add the sugar and continue beating until stiff peaks form.
  • Add the Meringue and Bake Again:

    • Remove the pie from the oven and spread the meringue evenly on top.
    • Return to the oven and bake for another 10-15 minutes until the meringue is lightly golden.
  • Cool and Serve:

    • Let the pie cool before slicing to allow the layers to set.
    • Serve and enjoy the airy meringue, tender apples, and crisp buttery crust.

Notes

  • Apple Variety: Use a mix of sweet and tart apples for a well-balanced flavor.
  • Dough Handling: Keep the butter cold for a flaky crust.
  • Perfect Meringue: Add sugar gradually to stabilize the meringue and achieve a glossy texture.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
