Instructions
- Prepare the Zucchini: Wash the zucchinis and cut them into even rounds or strips.
- Season the Slices: Sprinkle zucchini with salt, black pepper, paprika, and Provençal herbs for extra flavor.
- Set Up Breading Stations: In three separate bowls, place flour in one, whisked eggs in another, and a mixture of breadcrumbs and grated Parmesan cheese in the third.
- Coat the Zucchini: Dip each zucchini piece into the flour, then the eggs, and finally coat it with the Parmesan-breadcrumb mixture.
- Heat the Oil: In a frying pan, heat vegetable oil over medium heat.
- Fry Until Golden: Place the breaded zucchini slices in the pan and cook for 2–3 minutes per side until golden brown and crispy.
