  • 5 eggs
  • 100g Parmesan cheese, grated
  • 70g flour
  • 100g breadcrumbs
  • Vegetable oil (for frying)

  • Black pepper, to taste
  • Paprika, to taste
  • Provençal herbs, to taste

Instructions

  • Prepare the Zucchini: Wash the zucchinis and cut them into even rounds or strips.
  • Season the Slices: Sprinkle zucchini with salt, black pepper, paprika, and Provençal herbs for extra flavor.
  • Set Up Breading Stations: In three separate bowls, place flour in one, whisked eggs in another, and a mixture of breadcrumbs and grated Parmesan cheese in the third.
  • Coat the Zucchini: Dip each zucchini piece into the flour, then the eggs, and finally coat it with the Parmesan-breadcrumb mixture.
  • Heat the Oil: In a frying pan, heat vegetable oil over medium heat.
  • Fry Until Golden: Place the breaded zucchini slices in the pan and cook for 2–3 minutes per side until golden brown and crispy.
  • Drain & Serve: Remove from the oil and place on paper towels to absorb excess oil. Serve warm with your favorite dip.

  • Air Fryer Option: Air-fry at 375°F (190°C) for 12–15 minutes, shaking halfway through.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for crispiness.
  • Freezing: Freeze uncooked breaded zucchini slices on a baking sheet, then transfer them to a freezer bag. Cook from frozen when needed.
