Indulge in the White Chocolate Raspberry Bliss Bites, a dreamy no-bake treat that combines rich cheesecake, tart raspberries, and a silky white chocolate shell. Perfect for parties, gifting, or simply treating yourself to a bite of luxury!

Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh raspberries, mashed (or raspberry preserves)

For the White Chocolate Coating:

  • 1 cup white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or shortening (optional, for smoother melting)

For Garnish:

  • Freeze-dried raspberry powder or crushed freeze-dried raspberries
  • White chocolate drizzle (optional)

Instructions

  1. Prepare the Cheesecake Filling – In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the mashed raspberries until well combined. Chill for 30 minutes to firm up.
  2. Form the Bites – Scoop about 1 tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet and freeze for 1 hour to solidify.
  3. Melt the White Chocolate – In a microwave-safe bowl, melt white chocolate chips with coconut oil in 20-second intervals, stirring between each until smooth.
  4. Coat the Bites – Using a fork or toothpick, dip each frozen cheesecake ball into the melted white chocolate, ensuring full coverage. Let excess drip off before placing back on the baking sheet.
  5. Garnish & Set – While the chocolate is still wet, sprinkle with freeze-dried raspberry powder or drizzle with additional melted white chocolate. Refrigerate for at least 30 minutes to fully set.
