Ingredients
  

  • 160 g banana about 1 large banana, mashed
  • 110 g carrots finely grated
  • 200 g instant rolled oats
  • 150 g dried fruits such as raisins, dates, or apricots, chopped
  • 2 tablespoons shelled sunflower seeds
  • 2 tablespoons sesame seeds
  • 120 ml milk or water or orange juice for a different flavor
  • 0.5 teaspoon baking soda

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed banana, grated carrots, oats, dried fruits, sunflower seeds, and sesame seeds.
  3. Add the milk (or your preferred liquid) and mix well. Stir in the baking soda and allow the mixture to sit for 10 minutes.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 25-30 minutes, or until the cake is firm and lightly golden on top.
  6. Remove from the oven and let cool before slicing. Serve as is, or with a drizzle of honey or nut butter for extra flavor.

Notes

  • For a more classic carrot cake flavor, add cinnamon, nutmeg, or a splash of vanilla extract.
  • Swap banana with unsweetened applesauce if desired.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
