Ingredients

  • 240 grams 2 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 100 grams 1/2 cup Butter, chilled and cubed
  • 150 grams 1 1/2 cups Cheddar Cheese, grated
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Dill chopped
  • 1 Egg
  • 1/4 cup 60 ml Milk

Method

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent the bites from sticking.
  2. Prepare Dry Ingredients: In a large mixing bowl, combine the flour, salt, and baking powder. Stir in the grated cheddar cheese, fresh parsley, and dill.
  3. Cut in the Butter: Add the cubed butter to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Add Wet Ingredients: In a separate small bowl, whisk together the egg and milk. Pour this mixture into the flour and butter mixture. Stir until just combined, forming a dough. It should be slightly sticky but easy to handle.
  5. Shape the Bites: Take spoonfuls of the dough and shape them into small balls or discs, placing them on the prepared baking sheet. Leave some space between each bite to allow them to expand as they bake.
  6. Bake: Bake in the preheated oven for 15-18 minutes or until golden brown and firm to the touch.
  7. Cool and Serve: Let the bites cool on a wire rack for a few minutes before serving. Enjoy warm, or store them in an airtight container for up to 2 days.

Notes

  • Storage: These cheese and herb bites can be stored in an airtight container for up to 2 days at room temperature. For longer storage, refrigerate them, and reheat before serving.
  • Add-ins: Feel free to experiment with different herbs or cheeses. You can swap cheddar for mozzarella or gouda, or try adding garlic powder for extra flavor.
  • Vegan Version: To make these bites vegan, you can replace the butter with a dairy-free butter substitute and use plant-based cheese. For the egg, try using a flaxseed meal mixture (1 tablespoon of ground flaxseed mixed with 3 tablespoons of water).
  • Serving Suggestions: These bites are great on their own or served with dipping sauces like garlic butter, spicy mustard, or even a creamy ranch dip.
