Step-by-Step Instructions for Air Fryer Lasagna Fritta
  1. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook until al dente, about 8-10 minutes. Drain and rinse under cold water. Lay flat to cool.
  2. In a mixing bowl, combine ricotta, Parmesan, Romano, Asiago, and mozzarella. Add eggs and Italian seasoning; mix until creamy for the filling.
  3. Spread the cheese mixture on each lasagna noodle, roll up tightly, and place on a tray. Freeze for 1-2 hours.
  4. In one dish, beat eggs. In another, mix olive oil with breadcrumbs. Microwave the breadcrumb mixture until light golden, about 1-2 minutes.
  5. Dip each frozen roll in beaten eggs, then breadcrumb mixture to coat fully. Place back on tray.
  6. Preheat air fryer to 400°F for 5 minutes. Spray basket with oil, arrange frittas, spray tops, and cook for 14-16 minutes until golden brown, turning halfway.
  7. Serve with marinara and Alfredo sauce for dipping. Enjoy!

Notes

Store leftovers in an airtight container up to 3 days; reheat in air fryer for crispiness. For longer storage, freeze uncooked rolls for 2-3 months.
