Preheat & Prepare:
- Preheat oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or grease with butter.
Prepare the Muffin Batter:
- In a large bowl, whisk together flour, oats, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In a separate bowl, cream butter and sugars until light and fluffy.
- Mix in the egg and yogurt until fully combined.
- Gradually fold in the dry ingredients, mixing until just combined.
- Gently fold in chopped apples without overmixing.
Prepare the Oat Streusel Topping (Optional):
- In a small bowl, mix butter, brown sugar, flour, oats, and cinnamon until crumbly.
Fill & Bake:
- Spoon the batter into muffin tins, filling each about 3/4 full.
- Sprinkle streusel topping over each muffin (if using).
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
