Ingredients

  • 2 cups baking apples peeled, cored, chopped
  • 1 cup old-fashioned rolled oats
  • 1/2 tsp ground nutmeg
  • 1 large egg
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1 cup plain yogurt full-fat preferred
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp baking soda
Optional Oat Streusel Topping:
  • 3 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 3 tbsp all-purpose flour
  • 3 tbsp old-fashioned rolled oats
  • 1/2 tsp ground cinnamon

Method
 

Preheat & Prepare:
  1. Preheat oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease with butter.
Prepare the Muffin Batter:
  1. In a large bowl, whisk together flour, oats, cinnamon, nutmeg, baking powder, baking soda, and salt.
  2. In a separate bowl, cream butter and sugars until light and fluffy.
  3. Mix in the egg and yogurt until fully combined.
  4. Gradually fold in the dry ingredients, mixing until just combined.
  5. Gently fold in chopped apples without overmixing.
Prepare the Oat Streusel Topping (Optional):
  1. In a small bowl, mix butter, brown sugar, flour, oats, and cinnamon until crumbly.
Fill & Bake:
  1. Spoon the batter into muffin tins, filling each about 3/4 full.
  2. Sprinkle streusel topping over each muffin (if using).
  3. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
