- Peel and chop high-starch potatoes into even-sized pieces. Boil or steam for 20–25 minutes until tender, then drain and dry in a sieve.
- Mash the potatoes until fluffy and smooth, then let cool slightly before mixing with other ingredients.
- Mix the mashed potatoes with flour, sea salt, black pepper, and melted butter until a soft dough forms.
- On a floured surface, flatten the dough into an 8-inch round disc and cut into 6 wedges.
- Heat a skillet over medium heat, add butter, and fry the farls for about 5 minutes per side until golden brown and crispy.
- Once cooked, transfer to a warm plate lined with paper towels and serve immediately while still hot.
