Method
 

Step-by-Step Instructions
  1. Peel and chop high-starch potatoes into even-sized pieces. Boil or steam for 20–25 minutes until tender, then drain and dry in a sieve.
  2. Mash the potatoes until fluffy and smooth, then let cool slightly before mixing with other ingredients.
  3. Mix the mashed potatoes with flour, sea salt, black pepper, and melted butter until a soft dough forms.
  4. On a floured surface, flatten the dough into an 8-inch round disc and cut into 6 wedges.
  5. Heat a skillet over medium heat, add butter, and fry the farls for about 5 minutes per side until golden brown and crispy.
  6. Once cooked, transfer to a warm plate lined with paper towels and serve immediately while still hot.

Notes

Ensure potatoes are well-dried for light and fluffy farls. Avoid overcrowding the pan during frying.
