- Preheat your oven to 375°F (190°C).
- In a shallow bowl, whisk together one large egg and a splash of water until well combined.
- In a separate bowl, combine panko breadcrumbs, freshly grated Parmesan cheese, salt, and pepper.
- Pat dry the chicken breasts with paper towels. Dredge each chicken breast in the egg mixture and then coat it in the breadcrumb mixture.
- In a large skillet, heat a drizzle of olive oil over medium heat. Fry the breaded chicken breasts for 3-4 minutes on each side, until golden brown.
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, but 2 minutes less than recommended.
- Pour marinara sauce over the cooked pasta in the pot, stirring gently to coat the noodles.
- Transfer the sauced pasta into a greased baking dish and lay the pan-fried chicken on top. Sprinkle with shredded mozzarella cheese.
- Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown.
