Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow bowl, whisk together one large egg and a splash of water until well combined.
  3. In a separate bowl, combine panko breadcrumbs, freshly grated Parmesan cheese, salt, and pepper.
  4. Pat dry the chicken breasts with paper towels. Dredge each chicken breast in the egg mixture and then coat it in the breadcrumb mixture.
  5. In a large skillet, heat a drizzle of olive oil over medium heat. Fry the breaded chicken breasts for 3-4 minutes on each side, until golden brown.
  6. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, but 2 minutes less than recommended.
  7. Pour marinara sauce over the cooked pasta in the pot, stirring gently to coat the noodles.
  8. Transfer the sauced pasta into a greased baking dish and lay the pan-fried chicken on top. Sprinkle with shredded mozzarella cheese.
  9. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown.
  10. Let the dish rest for approximately 5 minutes before serving. Garnish with fresh basil if desired.
