Ingredients
  

  • 3 large potatoes
  • 1 onion
  • 1 carrot
  • 1 bell pepper
  • 2 tomatoes
  • 2 eggs
  • ½ cup liquid yogurt 125 ml / 4.3 fl. oz.
  • 4 tablespoons flour 100 g / 3.5 oz.
  • 150 grams cheese 5.3 oz
  • Parsley chopped

Method
 

  1. Grate the potatoes, onion, and carrot. Dice the bell pepper and tomatoes.
  2. In a large bowl, mix the vegetables with eggs, yogurt, flour, and seasonings.
  3. Stir in grated cheese and chopped parsley.
  4. Heat a pan with a little oil and spread the mixture evenly.
  5. Cook on medium heat until golden brown and crispy on both sides.
  6. Serve hot with your favorite dipping sauce.

Notes

  • For a crunchier texture, add breadcrumbs to the mix.
  • You can bake instead of frying for a lighter version.
