  • 2 cups cooked chicken shredded
  • 1 cup cottage cheese
  • 1 cup fresh blackberries halved
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley optional

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, cottage cheese, blackberries, celery, and red onion.
  • In a separate small bowl, whisk together the mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
  • Pour the dressing over the chicken mixture and gently fold until everything is well combined.
  • If using, fold in the chopped parsley for added flavor and color.
