Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup cottage cheese
  • 1 cup fresh blackberries halved
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley optional

Method
 

  1. In a large mixing bowl, combine the shredded chicken, cottage cheese, blackberries, celery, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently fold until everything is well combined.
  4. If using, fold in the chopped parsley for added flavor and color.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve the salad on a bed of greens or in lettuce wraps for a refreshing meal.
