Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish with butter, lining the bottom with parchment paper.
- Sift together the flour, baking powder, and salt in a mixing bowl.
- Cream together softened butter and sugar until light and fluffy. Add in the eggs one at a time and then the vanilla extract, mixing until combined.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared baking dish and sprinkle blueberries over the top.
- In a separate bowl, beat together cream cheese and sugar until smooth, then add in an egg and the remaining vanilla extract.
- Carefully pour the cream cheese mixture over the batter and top with additional blueberries.
- Bake for 40 to 45 minutes until golden on the edges and a toothpick comes out with a few moist crumbs.
- Let the cake cool completely on a wire rack before cutting into squares.
