  • 1 each Jalapeño Chopped; omit for milder flavor
  • 2 each Green Onions Sliced; red onion can be used for stronger taste
  • 1 bunch Cilantro Chopped; can substitute with parsley
  • 1 bag Chili Cheese Fritos Delivers signature crunch
Chipotle Dressing
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1/2 cup Mayonnaise Use vegan mayo for vegan version
  • 2 tablespoons Lime Juice Can substitute with lemon juice
  • 2 tablespoons Chipotle Sauce Adjust for desired spiciness

Method
 

Preparation
  1. In a large mixing bowl, combine the coleslaw mix, rinsed black beans, thawed corn, diced red bell pepper, chopped jalapeño, sliced green onions, and fresh cilantro. Toss together until evenly distributed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth and well-blended.
  3. Pour the creamy chipotle dressing over the salad base and toss gently until all are coated with the dressing.
  4. Sprinkle Chili Cheese Fritos over the salad just before serving to keep them crisp.
