- Roll out chilled puff pastry dough on a floured surface until about 1/8-inch thick. Cut out 3-inch circles and refrigerate for 15 minutes.
- Use a smaller cutter to create an indentation in the center of each circle and poke holes with a fork.
- Preheat oven to 400°F (200°C). Whisk an egg and brush over pastry circles, then refrigerate for another 10 minutes.
- Pipe a teaspoon of jam into each pastry and top with a slice of Brie cheese.
- Bake for about 12-15 minutes until golden brown and cheese is melted.
- Let cool slightly, then garnish with thyme or chives before serving.
