Ingredients
  

  • 4 large boneless skinless chicken breasts
  • 3 cups broccoli florets fresh or frozen
  • cups shredded sharp cheddar cheese
  • 2 oz cream cheese at room temperature
  • 1 tablespoon chopped fresh chives or your choice of herbs
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • Salt and pepper to taste
  • Optional: smoked paprika or Italian seasoning
  • ¼ cup olive oil divided

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Steam the broccoli: Add broccoli and 2 tablespoons of water to a microwave-safe bowl. Cover and microwave for 2 minutes. Drain and finely chop.
  3. Prepare the filling: In a mixing bowl, combine chopped broccoli, shredded cheddar, cream cheese, chives, salt, and pepper. Stir until smooth and evenly mixed.
  4. Stuff the chicken: Using a sharp knife, slice a deep pocket into the side of each chicken breast without cutting all the way through. Fill each pocket generously with the broccoli-cheddar mixture.
  5. Season the chicken: Rub the outside of each breast with garlic powder, cumin, additional salt and pepper, and any other desired spices.
  6. Sear: Heat 2 tablespoons olive oil in each of two oven-safe skillets over medium heat. Sear two chicken breasts per pan, about 3 minutes per side, until golden.
  7. Bake: Transfer the skillets to the oven and bake for 10–15 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Rest and serve: Let the chicken rest for 5 minutes before serving to retain juices. Serve warm.

Notes

  • If using frozen broccoli, thaw and drain thoroughly before chopping to avoid excess moisture in the filling.
  • Feel free to substitute other cheeses like mozzarella, pepper jack, or gouda for variety.
  • For an extra crispy finish, sprinkle a bit of shredded cheese on top before baking.
  • This dish pairs beautifully with cauliflower rice, mashed potatoes, or a fresh garden salad.
