  • 1 cup diced tomatoes
  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh basil chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • In a medium bowl, combine the diced tomatoes, red onion, basil, balsamic vinegar, olive oil, garlic, salt, and black pepper. Mix well and set aside to let the flavors meld for about 15 minutes.
  • In a separate bowl, beat the softened cream cheese until smooth. Stir in the mozzarella and Parmesan cheeses until well combined.
  • Spread the cream cheese mixture evenly in the bottom of a serving dish.
  • Spoon the tomato mixture over the cream cheese layer, spreading it evenly.
  • Serve immediately with toasted baguette slices, crackers, or fresh vegetables.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the tomato mixture.
  • Substitute the cream cheese with Greek yogurt for a lighter version.
