- Begin by lining a large cookie sheet with parchment paper to ensure easy removal of your Buddy the Elf Cookies later.
- In your large mixing bowl, add the chow mein noodles and set them aside.
- Using a double boiler, melt the white chocolate over medium heat, stirring continuously until it becomes smooth and glossy.
- Carefully stir half of the mini marshmallows into the melted white chocolate until they are mostly blended but still chunky.
- Pour the white chocolate mixture over the chow mein noodles in the bowl. Gently fold the mixture together until the noodles are evenly coated.
- Using a spoon or cookie scoop, portion out the mixture onto the parchment-lined sheet, forming small haystack shapes.
- Melt the milk chocolate using the same double boiler method, then drizzle it generously over each cookie, followed by maple syrup and chocolate syrup.
- Sprinkle the remaining mini marshmallows, mini red and green M&Ms, and broken pieces of Chocolate Pop Tart over the drizzled cookies.
- Allow the Buddy the Elf Cookies to sit at room temperature until the chocolate has completely set.
