  • 2 cups all-purpose flour or gluten-free flour
  • 1 tsp baking powder
  • 1 tsp kosher salt or regular salt
  • 1/4 cup lard or shortening or butter
  • 3/4 cup water room temperature
For the Filling
  • 1 tbsp vegetable oil or olive/canola oil
  • 1 lb ground beef or ground turkey/plant-based option
  • 1 tbsp taco seasoning homemade or store-bought
  • 1 cup shredded cheddar cheese or non-dairy cheese
  • 1 cup black beans or pinto beans
  • 1 cup corn canned, frozen or fresh
  • 1 cup chopped tomatoes or salsa
  • 1 large egg for egg wash, replace with flax egg if vegan
  • 1 tbsp water for egg wash

Method
 

Step-by-Step Instructions
  1. Prepare Dough: In a large bowl, mix flour, baking powder, and salt. Cut in lard/shortening. Gradually add water and knead until smooth. Cover and rest for 10-20 minutes.
  2. Cook Meat Filling: Heat oil in skillet. Brown half the ground beef for 5-7 minutes. Remove, repeat with remaining beef. Add taco seasoning and a splash of water, simmering for 3-5 minutes.
  3. Shape Tortillas: Divide rested dough into golf ball-sized portions. Use a tortilla press or rolling pin to flatten between parchment sheets. Press into skull mold.
  4. Fill Tortillas: Remove shaped tortillas, fill with taco meat, cheese, beans, corn, and tomatoes. Fold and seal edges tightly.
  5. Bake: Preheat oven to 350°F. Prepare egg wash and brush over skulls. Bake for 24-26 minutes until golden and crispy.
  6. Cool & Serve: Allow to cool briefly then serve warm with dips like sour cream, guacamole, or salsa.

Notes

Ensure dough is not too sticky. Use fresh dough for best results. Keep assembled skulls warm before baking. Reheat in the oven for best texture.
