Ingredients
  

  • 250 g flour
  • 170 g butter softened
  • 100 g sugar 50 g for the dough + 50 g for sprinkling
  • 1 tsp vanilla extract optional
  • A pinch of salt optional

Method
 

  1. In a mixing bowl, cream the butter and 50 g of sugar together until light and fluffy.
  2. Add the flour gradually, mixing until a soft dough forms. Stir in vanilla extract and salt if using.
  3. Roll the dough into small balls and gently flatten them, or shape them with a cookie cutter.
  4. Place the cookies on a parchment-lined baking sheet and sprinkle with the remaining 50 g of sugar.
  5. Preheat the oven to 350°F (175°C) and bake for 12-15 minutes, or until the edges are lightly golden.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  7. Serve and enjoy with tea, coffee, or as a sweet snack.

Notes

  • For an extra light texture, substitute half of the flour with cornstarch.
  • To enhance the flavor, add lemon or orange zest to the dough.
  • Store in an airtight container at room temperature for up to a week.
