Ingredients
  

  • 1 tablespoon olive oil
  • ½ cup diced onion
  • 1 tablespoon chopped garlic
  • 2 pounds ground chicken
  • 1 teaspoon kosher salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • 8 ounces tomato sauce or marinara
  • 1 tablespoon balsamic vinegar
  • 8 ounces mozzarella pearls or torn fresh mozzarella
  • 10 ounces cherry tomatoes halved
  • Fresh chopped basil for garnish
  • Balsamic glaze for garnish
  • Grated parmesan cheese for garnish

Method
 

  1. Preheat Oven:Set your oven to 500°F to prepare for broiling.
  2. Cook Aromatics:Heat olive oil in a large oven-safe skillet over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in chopped garlic and cook for an additional minute.
  3. Brown the Chicken:Add ground chicken to the skillet. Break it apart with a spoon and cook until fully browned and cooked through. Drain any excess liquid if necessary.
  4. Season and Simmer:Sprinkle in salt, oregano, basil, and parsley. Stir well. Add tomato sauce and balsamic vinegar, mixing to combine everything evenly.
  5. Add Toppings:Scatter mozzarella pearls and halved cherry tomatoes across the top of the ground chicken mixture.
  6. Bake Until Bubbling:Transfer the skillet to the preheated oven. Bake for 7–8 minutes until the cheese is melted and the tomatoes are blistered.
  7. Finish and Serve:Remove from oven and top with freshly chopped basil, a generous drizzle of balsamic glaze, and grated parmesan. Serve hot straight from the skillet or over pasta, rice, or toasted bread.
