Step‑by‑Step Instructions
  1. In a small bowl, mix together 2 tablespoons of soy sauce with 1 tablespoon of water until fully combined. Set aside.

  3. Heat a non-stick skillet over medium-low heat, add a drizzle of oil, pour in the whisked eggs, and cook gently for 2-3 minutes.
  4. In the same skillet, increase the heat to medium and add 12 ounces of diced Spam. Cook undisturbed for about 4-5 minutes until golden brown.
  5. Once the Spam is browned, sprinkle 1 tablespoon of sugar evenly and toss. Pour in the soy sauce mixture and stir together. Cook for an additional 3-4 minutes.
  6. To plate, place cooked white rice on each plate and top with glazed Spam and fluffy scrambled eggs. Garnish with fried garlic, furikake, and chopped green onion.

Notes

For best results, use day-old rice for better texture. Consider adding a dash of hot sauce to spice it up.
