- Pat the salmon fillets dry with paper towels; season with salt, pepper, curry powder, garlic powder, and smoked paprika. Let rest for 5 minutes.
- Heat olive oil in a skillet over medium heat. Add salmon fillets skin-side down and sear for about 5-6 minutes until crispy. Flip and cook for another 2-3 minutes. Remove and set aside.
- In the same skillet, add more oil if necessary, add onions and bell peppers, sauté for 4-5 minutes until soft.
- Sprinkle in curry powder and cook for 30 seconds to bloom the spices.
- Pour in coconut milk and bring to a gentle simmer, cooking for 5 minutes until sauce thickens slightly.
- Return cooked salmon, spoon sauce over, warm through for 2-3 minutes, serve with rice or veggies.
Notes
For best flavor, don't wipe the skillet between steps to retain the flavorful bits. Adjust spice levels to taste.
