  • 4 fillets Salmon Fillets skin-on recommended
For the Curry Sauce
  • 2 tablespoons Caribbean-Style Curry Powder opt for authentic brands
  • 1 can Coconut Milk full-fat for richness
  • 1 medium Onion chopped
  • 1 cup Bell Peppers sliced; any color
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
For Cooking
  • 2 tablespoons Olive Oil or coconut oil

Step-by-Step Instructions
  1. Pat the salmon fillets dry with paper towels; season with salt, pepper, curry powder, garlic powder, and smoked paprika. Let rest for 5 minutes.
  2. Heat olive oil in a skillet over medium heat. Add salmon fillets skin-side down and sear for about 5-6 minutes until crispy. Flip and cook for another 2-3 minutes. Remove and set aside.
  3. In the same skillet, add more oil if necessary, add onions and bell peppers, sauté for 4-5 minutes until soft.
  4. Sprinkle in curry powder and cook for 30 seconds to bloom the spices.
  5. Pour in coconut milk and bring to a gentle simmer, cooking for 5 minutes until sauce thickens slightly.
  6. Return cooked salmon, spoon sauce over, warm through for 2-3 minutes, serve with rice or veggies.

Notes

For best flavor, don't wipe the skillet between steps to retain the flavorful bits. Adjust spice levels to taste.
