Ingredients
  

Macaron Shells
  • 1 cup Almond Flour Finely ground
  • 1 cup Powdered Sugar
  • 3 large Egg Whites Room temperature
  • 1/4 cup Granulated Sugar
  • few drops Food Coloring Optional
Carrot Cake Layer
  • 1/2 cup Vegetable Oil Melted butter or applesauce can be used
  • 2 large Eggs Room temperature
  • 1 cup All-Purpose Flour Gluten-free blend can be used
  • 1 tsp Baking Powder Fresh
  • 1/2 tsp Baking Soda Fresh
  • 1 tsp Cinnamon Can combine with nutmeg
  • 1/4 tsp Salt No substitutes suggested
  • 1 cup Shredded Carrots Pre-packaged can be used
Cream Cheese Frosting
  • 1/2 cup Butter Softened
  • 8 oz Cream Cheese Softened

Method
 

Macaron Preparation
  1. Preheat your oven to 300°F (150°C). Sift together powdered sugar and almond flour in a bowl.
  2. In a heatproof bowl, whisk the egg whites and granulated sugar over simmering water until sugar dissolves. Whip to stiff peaks.
  3. Fold in the dry ingredients until smooth.
Baking Macaron Shells
  1. Transfer batter to a piping bag and pipe small circles on parchment-lined baking sheets.
  2. Let macarons dry for about 30 minutes before baking.
  3. Bake for 18-20 minutes until firm.
Carrot Cake Layer
  1. Combine vegetable oil, eggs, and granulated sugar in a bowl.
  2. Sift flour, baking powder, baking soda, cinnamon, and salt, then fold in shredded carrots and spread in a lined pan.
  3. Bake at 350°F (175°C) for 15-20 minutes, cool completely.
Cream Cheese Frosting Preparation
  1. Beat softened butter and cream cheese until fluffy.
  2. Gradually add sifted powdered sugar and mix until creamy.
Assembly
  1. Assemble macarons by piping cream cheese frosting onto one shell, adding carrot cake, and another shell on top.
  2. Chill assembled macarons overnight for best flavor.

Notes

Ensure egg whites are at room temperature for maximum volume. Allow macaron shells to dry completely before baking.
