Macaron Preparation
- Preheat your oven to 300°F (150°C). Sift together powdered sugar and almond flour in a bowl.
- In a heatproof bowl, whisk the egg whites and granulated sugar over simmering water until sugar dissolves. Whip to stiff peaks.
- Fold in the dry ingredients until smooth.
Baking Macaron Shells
- Transfer batter to a piping bag and pipe small circles on parchment-lined baking sheets.
- Let macarons dry for about 30 minutes before baking.
- Bake for 18-20 minutes until firm.
Carrot Cake Layer
- Combine vegetable oil, eggs, and granulated sugar in a bowl.
- Sift flour, baking powder, baking soda, cinnamon, and salt, then fold in shredded carrots and spread in a lined pan.
- Bake at 350°F (175°C) for 15-20 minutes, cool completely.
Cream Cheese Frosting Preparation
- Beat softened butter and cream cheese until fluffy.
- Gradually add sifted powdered sugar and mix until creamy.
Assembly
- Assemble macarons by piping cream cheese frosting onto one shell, adding carrot cake, and another shell on top.
- Chill assembled macarons overnight for best flavor.
