For the Pretzel Bath

For the Cheese Filling

Method
 

Dough Preparation
  1. In a mixing bowl, combine warm water, sugar, and instant yeast. Allow to bloom for about 5 minutes.
  2. Gradually add all-purpose flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for 5-7 minutes.
Resting
  1. Place the kneaded dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
Shaping
  1. Once risen, punch down the dough, divide it into 12 pieces, flatten each, place cheese in the center, and seal tightly.
Boiling
  1. In a pot, boil water and stir in baking soda. Add pretzels one at a time and boil for 30 seconds, then remove.
Baking
  1. Preheat oven to 450°F (230°C), brush boiled pretzels with melted butter, sprinkle salt, and bake for 12-15 minutes until golden brown.
Cooling
  1. Let baked pretzels cool on a wire rack for about 5 minutes before serving warm.

Notes

Ensure water is warm, not hot, and knead the dough properly for the desired chewiness. Boil for 30 seconds for a crisp crust.
