Dough Preparation

Resting
- Place the kneaded dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
Shaping
- Once risen, punch down the dough, divide it into 12 pieces, flatten each, place cheese in the center, and seal tightly.
Boiling
- In a pot, boil water and stir in baking soda. Add pretzels one at a time and boil for 30 seconds, then remove.
Baking
- Preheat oven to 450°F (230°C), brush boiled pretzels with melted butter, sprinkle salt, and bake for 12-15 minutes until golden brown.
Cooling
- Let baked pretzels cool on a wire rack for about 5 minutes before serving warm.
Notes
Ensure water is warm, not hot, and knead the dough properly for the desired chewiness. Boil for 30 seconds for a crisp crust.
