Ingredients
  

  • 1 pound ground beef
  • ½ cup chopped onion
  • 2 cloves garlic minced
  • 1 packet 1 oz taco seasoning
  • ½ cup water
  • 1 cup cooked rice white, brown, or Spanish rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup salsa
  • ½ cup sour cream for serving
  • ¼ cup chopped fresh cilantro optional, for garnish

Method
 

Cook the Beef Mixture:
  1. Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula.
  2. Drain any excess fat and stir in chopped onion and minced garlic. Cook for 2–3 minutes, until the onion is soft.
Season the Beef:
  1. Sprinkle taco seasoning over the beef mixture and pour in water.
  2. Stir well and let simmer for about 5 minutes, until the sauce thickens.
Prepare the Tortillas:
  1. Preheat your oven to 375°F (190°C).
  2. Lay the tortillas flat on a clean surface. Divide the cooked rice and beef mixture evenly among the tortillas.
Add the Cheese:
  1. Sprinkle shredded cheddar and mozzarella cheese over the beef and rice mixture on each tortilla.
Roll the Burritos:
  1. Tightly roll up each tortilla, tucking in the sides as you go to form neat burritos.
  2. Place the burritos seam-side down in a parchment-lined baking dish.
Top and Bake:
  1. Spread salsa evenly over the top of the burritos.
  2. Sprinkle extra cheese on top for a gooey finish.
  3. Bake for 20 minutes, or until the cheese is melted and bubbly.
Serve:
  1. Let the burritos cool slightly before serving.
  2. Garnish with fresh cilantro and serve with sour cream on the side.

Notes

  • For a spicier kick, add diced jalapeños or hot sauce to the beef mixture.
  • Don’t overfill the tortillas to avoid messy rolling.
  • These burritos are best served warm but reheat beautifully in the oven or microwave.
