Method
Cook the Beef Mixture:
- Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula.
- Drain any excess fat and stir in chopped onion and minced garlic. Cook for 2–3 minutes, until the onion is soft.
Season the Beef:
- Sprinkle taco seasoning over the beef mixture and pour in water.
- Stir well and let simmer for about 5 minutes, until the sauce thickens.
Prepare the Tortillas:
- Preheat your oven to 375°F (190°C).
- Lay the tortillas flat on a clean surface. Divide the cooked rice and beef mixture evenly among the tortillas.
Add the Cheese:
- Sprinkle shredded cheddar and mozzarella cheese over the beef and rice mixture on each tortilla.
Roll the Burritos:
- Tightly roll up each tortilla, tucking in the sides as you go to form neat burritos.
- Place the burritos seam-side down in a parchment-lined baking dish.
Top and Bake:
- Spread salsa evenly over the top of the burritos.
- Sprinkle extra cheese on top for a gooey finish.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
Serve:
- Let the burritos cool slightly before serving.
- Garnish with fresh cilantro and serve with sour cream on the side.
Notes
- For a spicier kick, add diced jalapeños or hot sauce to the beef mixture.
- Don’t overfill the tortillas to avoid messy rolling.
- These burritos are best served warm but reheat beautifully in the oven or microwave.
