Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) to prepare for baking the potatoes.
  2. Scrub and dry the russet potatoes, piercing each several times with a fork.
  3. Rub each potato generously with olive oil and sprinkle with salt and pepper.
  4. Place the potatoes on a baking sheet and bake for 45-60 minutes until tender.
  5. In a skillet, cook the ground beef over medium heat for 5-7 minutes until browned.
  6. Stir in the taco seasoning and simmer for 3-5 minutes.
  7. Take the cooked potatoes out of the oven, slice them lengthwise, and fluff the insides.
  8. Fill each potato with the seasoned beef mixture and top with shredded cheese.
  9. Return the stuffed potatoes to the oven for 10-15 minutes until the cheese melts.
  10. Add toppings like sour cream, green onions, diced tomatoes, and olives before serving.
