Cooking Steps
- Preheat your oven to 400°F (200°C) to prepare for baking the potatoes.
- Scrub and dry the russet potatoes, piercing each several times with a fork.
- Rub each potato generously with olive oil and sprinkle with salt and pepper.
- Place the potatoes on a baking sheet and bake for 45-60 minutes until tender.
- In a skillet, cook the ground beef over medium heat for 5-7 minutes until browned.
- Stir in the taco seasoning and simmer for 3-5 minutes.
- Take the cooked potatoes out of the oven, slice them lengthwise, and fluff the insides.
- Fill each potato with the seasoned beef mixture and top with shredded cheese.
- Return the stuffed potatoes to the oven for 10-15 minutes until the cheese melts.
- Add toppings like sour cream, green onions, diced tomatoes, and olives before serving.
