Prepare the Onion and Garlic: In a skillet, heat the butter over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 4-5 minutes. Add the minced garlic and cook for another minute. Remove from heat and set aside to cool.
Mix the Meatball Ingredients: In a large mixing bowl, combine the minced chicken, breadcrumbs, eggs, grated cheese, sautéed onions and garlic, salt, black pepper, and parsley. Mix everything together until it’s well combined. Make sure not to overmix, as this could result in tough meatballs.
Shape the Meatballs: Wet your hands slightly to prevent sticking, then shape the mixture into small meatballs, about 1-1.5 inches in diameter.
Fry the Meatballs: Heat vegetable oil in a large skillet over medium-high heat. Carefully add the meatballs to the pan in batches. Fry for about 6-7 minutes on each side, turning them gently to brown evenly on all sides. Once cooked, transfer to a plate lined with paper towels to drain excess oil.
Serve: Serve the meatballs hot with your favorite sauce, pasta, or sides. Garnish with freshly chopped parsley for an added burst of flavor.
