- In a large bowl, combine sweet potato rounds, melted butter, cinnamon, salt, and pepper. Toss until evenly coated.
- Spread sweet potato slices in a single layer on a baking sheet lined with parchment paper.
- Roast the sweet potatoes for 25-30 minutes, stirring halfway through for even browning.
- In a bowl, mix maple syrup, chopped walnuts, additional cinnamon, and thyme. Set aside.
- Once roasted, spoon the maple-walnut mixture over each slice of sweet potato.
