Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients while the oven heats up.
  2. Wash and peel the sweet potatoes if desired, then slice them into 1/2-inch thick rounds.
  3. In a large bowl, combine sweet potato rounds, melted butter, cinnamon, salt, and pepper. Toss until evenly coated.
  4. Spread sweet potato slices in a single layer on a baking sheet lined with parchment paper.
  5. Roast the sweet potatoes for 25-30 minutes, stirring halfway through for even browning.
  6. In a bowl, mix maple syrup, chopped walnuts, additional cinnamon, and thyme. Set aside.
  7. Once roasted, spoon the maple-walnut mixture over each slice of sweet potato.
  8. Return to the oven and bake for an additional 8-10 minutes until the topping caramelizes.
  9. Remove from the oven and serve warm, optionally topped with crumbled feta.
