  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups rhubarb chopped (fresh or frozen)
  • 1/2 cup chopped walnuts or pecans optional
  • 1 tablespoon brown sugar for topping
  • 1 teaspoon ground cinnamon for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  6. Gently fold in the chopped rhubarb and nuts, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. In a small bowl, mix the brown sugar and ground cinnamon for the topping, then sprinkle it evenly over the batter.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a sweeter twist, add 1/2 cup of chocolate chips to the batter.
  • If rhubarb is not available, substitute it with chopped strawberries or apples for a different flavor profile.
