For Extra Nutrition (Optional)
  • to taste Vegetables like bell peppers or snap peas

Equipment

  • Saucepan
  • large skillet
  • large bowl

Method

Directions
  1. Begin by rinsing the rice under cold water until the water runs clear. Combine the rinsed rice with coconut milk in a saucepan and cook over medium heat, bringing to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes until fluffy.
  2. While the rice is cooking, season the chicken with salt and pepper. Heat oil in a large skillet over medium-high heat, add chicken, and cook for 6-8 minutes on each side until golden brown and cooked through.
  3. Once both chicken and rice are cooked, let the chicken rest before slicing it. Combine the fluffy coconut rice with any optional vegetables in a large bowl.
  4. To serve, scoop a portion of coconut rice into each bowl, top with sliced chicken, and garnish with fresh herbs.

Notes

For extra flavor, consider adding a splash of lime juice or zest right before serving.
