Step-by-Step Instructions
  1. Begin by lightly sprinkling kosher salt on the fresh cod filets and set aside for 10 minutes.
  2. In a large skillet over medium heat, add oil and sauté shallot, garlic, ginger, and optional chili for 2-3 minutes.
  3. Whisk in coconut milk, lime juice, fish sauce, and brown sugar. Bring to a gentle simmer for 5 minutes.
  4. Carefully poach the seasoned cod in the broth for 6-8 minutes until it is opaque.
  5. Remove cod and stir in bok choy, cooking for 1-2 minutes until vibrant.
  6. Serve the broth filled with bok choy, top with cod, and garnish with cilantro, scallions, and lime wedges.
