Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine glutinous rice flour, granulated sugar, and salt. Whisk together until evenly mixed.
  2. Gradually pour in coconut milk and water, stirring continuously until a smooth batter forms. This may take 2-3 minutes.
  3. Transfer the batter to a heatproof dish lined with parchment paper. Steam over medium heat for 20-25 minutes until firm and glossy. Check doneness with a toothpick.
  4. While the dough is steaming, scoop mango puree into small dollops and freeze for 15 minutes until firm.
  5. Once the dough is cool, lightly grease hands with coconut oil. Take a tablespoon of dough, flatten it, place the frozen mango puree in the center, and roll into a ball.
  6. Roll each bliss ball in desiccated coconut until completely coated.
  7. Place the coated bliss balls in the refrigerator for 15 minutes to fully set. Serve as a refreshing snack!

Notes

Adjust thickness of the dough with coconut milk or flour for the perfect consistency. Use unsweetened coconut for less sweetness. Freeze mango filling for easier assembly.
