Ingredients
  

For the Base
  • 250 g Arnott's Marie biscuits Can substitute with Digestive or rich tea biscuits.
  • 2 tbsp instant coffee granules Granulated coffee works in a pinch.
  • 1 cup cocoa powder No substitutes recommended.
  • 100 g light brown sugar Granulated sugar can be used for a lighter taste.
  • 1 can sweetened condensed milk Best not to substitute.
  • 75 g desiccated coconut Optional.
  • 125 g salted butter Use unsalted butter plus a pinch of salt if needed.
  • 1 tsp vanilla extract
  • 2 tbsp boiling water
For the Icing
  • 200 g milk chocolate Dark chocolate can be used instead.
  • 50 g additional salted butter

Method
 

Preparation Steps
  1. Begin by greasing a 20 x 20 cm baking tin with a little butter and lining it with parchment paper.
  2. Using a food processor or a rolling pin, crush the Arnott's Marie biscuits into fine crumbs.
  3. In a medium bowl, combine the instant coffee granules, cocoa powder, and light brown sugar. Pour in the boiling water and stir until smooth.
  4. In a large mixing bowl, combine the crushed biscuits, sweetened condensed milk, desiccated coconut, melted butter, and vanilla extract. Add the coffee mixture and mix well.
  5. Transfer the mixture into the prepared tin and press it down firmly to create an even layer.
  6. In a microwave-safe bowl, combine the milk chocolate and additional salted butter. Microwave in intervals, stirring until smooth.
  7. Pour the icing over the cooled base and spread it evenly.
  8. Place the tin in the refrigerator for at least 2 hours to set completely.

Notes

Best enjoyed chilled with a cup of coffee or tea. Optionally, add nuts or citrus for extra flavor!
