This Cookie Monster Ice Cream Sandwich Cake is a no-bake dessert that's as fun to make as it is to eat. Stacked layers of creamy whipped topping, iconic blue color, soft ice cream sandwiches, and a cookie crumble topping make this frozen treat the perfect monster-approved party hit. It’s sweet, easy, and always a crowd-pleaser!

Ingredients
  

  • 24 ice cream sandwiches
  • 16 ounces frozen whipped topping thawed
  • Blue gel food coloring or full bottle of regular blue food coloring
  • 12 chocolate chip cookies chopped (such as Chips Ahoy)
  • 12 Oreo cookies chopped

Method
 

  1. Color the WhipIn a large bowl, combine the whipped topping with blue food coloring until it reaches the bright Cookie Monster shade you love.
  2. Build the First LayerLine 12 ice cream sandwiches across the bottom of a 9x13-inch dish. Trim one or two sandwiches as needed to fit.
  3. Add the FrostingSpread half of the blue whipped topping over the sandwiches evenly.
  4. Cookie SprinkleSprinkle half of the chopped chocolate chip cookies and Oreos over the whipped topping layer.
  5. Repeat the LayersAdd another 12 ice cream sandwiches, followed by the rest of the blue whipped topping. Finish with the remaining chopped cookies.
  6. FreezeCover the dish loosely with foil and freeze for 3 to 4 hours until firm.
  7. ServeSlice into squares and serve immediately. Store leftovers in the freezer.

Notes

  • You can swap the whipped topping for homemade stabilized whipped cream if desired.
