Ingredients
  

  • 1 cup cottage cheese
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 2 tablespoons chocolate chips optional

Instructions
 

  • In a microwave-safe bowl, combine the cottage cheese, cocoa powder, sugar, flour, baking powder, salt, vanilla extract, and egg. Mix well until smooth and fully combined.
  • If desired, fold in the chocolate chips for added richness.
  • Pour the mixture into a greased microwave-safe mug or small bowl.
  • Microwave on high for 1 to 1.5 minutes, checking for doneness. The brownie should be set but still moist in the center.
  • Let it cool for a minute before enjoying.

Notes

  • For a richer flavor, substitute half of the cottage cheese with Greek yogurt.
  • Add a tablespoon of peanut butter or almond butter to the mixture for a nutty twist.
