- In a microwave-safe bowl, combine the cottage cheese, cocoa powder, sugar, flour, baking powder, salt, vanilla extract, and egg. Mix well until smooth and fully combined.
- If desired, fold in the chocolate chips for added richness.
- Pour the mixture into a greased microwave-safe mug or small bowl.
- Microwave on high for 1 to 1.5 minutes, checking for doneness. The brownie should be set but still moist in the center.
- Let it cool for a minute before enjoying.
Notes
- For a richer flavor, substitute half of the cottage cheese with Greek yogurt.
