- In a medium mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Blend on medium speed for about 2 minutes until smooth and creamy. Set aside.
- In a separate bowl, mix pumpkin puree, egg yolk, brown sugar, corn starch, vanilla, and spices until a smooth mixture forms, about 3 minutes.
- Preheat your oven to 375°F (190°C). Unroll the crescent dough and cut into 8 equal squares, sealing perforations well. Place on a parchment-lined baking sheet.
- Add a spoonful of cream cheese filling in the center of each dough square followed by pumpkin filling. Pinch corners to seal and shape into balls.
- Wrap each ball with kitchen twine to create sections like a pumpkin. Bake for 15-20 minutes until golden brown.
- Cool for about 5 minutes, then cut the twine and insert a pretzel stick into each pumpkin as a stem. Serve warm.
