  • 8 oz Cream Cheese Substitute Neufchâtel for a lighter option.
  • 1/4 cup Granulated Sugar
  • 1 tsp Vanilla Extract
For the Pumpkin Filling
  • 1 cup Pumpkin Puree Use pure pumpkin puree, not pie filling.
  • 1/4 cup Brown Sugar
  • 1 large Egg Yolk
  • 1 tbsp Corn Starch
  • 1 tsp Spices (Cinnamon, Nutmeg, Cloves, Allspice) Adjust to your liking.
For the Finishing Touch
  • 8 pieces Pretzel Sticks Add as stems to the pumpkin delights.

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Blend on medium speed for about 2 minutes until smooth and creamy. Set aside.
  2. In a separate bowl, mix pumpkin puree, egg yolk, brown sugar, corn starch, vanilla, and spices until a smooth mixture forms, about 3 minutes.
  3. Preheat your oven to 375°F (190°C). Unroll the crescent dough and cut into 8 equal squares, sealing perforations well. Place on a parchment-lined baking sheet.
  4. Add a spoonful of cream cheese filling in the center of each dough square followed by pumpkin filling. Pinch corners to seal and shape into balls.
  5. Wrap each ball with kitchen twine to create sections like a pumpkin. Bake for 15-20 minutes until golden brown.
  6. Cool for about 5 minutes, then cut the twine and insert a pretzel stick into each pumpkin as a stem. Serve warm.

Notes

Ensure pumpkin puree is well-drained; very important to prevent sogginess. Pinch dough tightly to seal, and leave space between treats on the baking sheet.
