Step-by-Step Instructions
  1. Begin by patting the large shrimp dry with paper towels, ensuring they are fully peeled and deveined. Season the shrimp lightly with kosher salt.
  2. In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat until shimmering but not smoking.
  3. Carefully add the seasoned shrimp to the skillet in a single layer. Sear for about 1-2 minutes on each side until they turn pink-orange and are opaque. Remove the shrimp and set aside.
  4. Lower the heat to medium and add the garlic and chili flakes to the skillet. Sauté for 30-60 seconds until fragrant and golden.
  5. Pour in the coconut milk, scraping the bottom of the skillet. Allow to simmer for 3-5 minutes until the sauce thickens slightly.
  6. Return the seared shrimp to the skillet, gently tossing them in the sauce. Cook together for about 1 minute until heated through.
