Preparation Steps
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs with melted butter until mixed. Press this mixture into a greased 9×13 inch baking dish, creating an even layer. Bake for 10 minutes or until golden brown, then let it cool completely.
  2. In a large mixing bowl, whisk together the well-whipped coconut cream, powdered sugar, and vanilla extract until smooth. Gently fold in the drained crushed pineapple and half of the whipped cream until just blended.
  3. Spread the creamy coconut mixture evenly over the cooled crust. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until firm.
  4. After chilling, top the bars with the remaining whipped cream and sprinkle shredded coconut on top. Cut into squares and serve chilled.

Notes

Drain crushed pineapple well to prevent a soggy filling. Allow at least 4 hours to chill for best results.
