Preparation Steps
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs with melted butter until mixed. Press this mixture into a greased 9×13 inch baking dish, creating an even layer. Bake for 10 minutes or until golden brown, then let it cool completely.
- In a large mixing bowl, whisk together the well-whipped coconut cream, powdered sugar, and vanilla extract until smooth. Gently fold in the drained crushed pineapple and half of the whipped cream until just blended.
- Spread the creamy coconut mixture evenly over the cooled crust. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until firm.
- After chilling, top the bars with the remaining whipped cream and sprinkle shredded coconut on top. Cut into squares and serve chilled.
Notes
Drain crushed pineapple well to prevent a soggy filling. Allow at least 4 hours to chill for best results.
