  1. Slice the yellow onions into 1/8-inch rings using a mandoline and set aside.
  2. In a large Dutch oven, heat olive oil and butter over medium heat. Add the sliced onions and cook for about 30-35 minutes until caramelized.
  3. Add minced garlic, red pepper flakes, soy sauce, and Worcestershire sauce to the onions; stir for about 30 seconds.
  4. Pour in water and beef bouillon, combine with half of the evaporated milk, and bring to a boil.
  5. Stir in the short cut pasta and reduce heat to a simmer. Cook uncovered for about 11-14 minutes, stirring frequently.
  6. Remove from heat and gradually stir in the Gruyere and Parmesan cheese until melted completely.
