Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). On a baking sheet, arrange whole red bell peppers and unpeeled garlic cloves in a single layer. Roast for 25-30 minutes until blistered.
  2. Remove from oven and let cool for about 10 minutes. Peel the skins off the peppers and squeeze the garlic out of its skin.
  3. In a food processor, combine roasted red peppers, garlic, softened cream cheese, sour cream, salt, and black pepper. Pulse until smooth.
  4. Transfer the dip to an airtight container and refrigerate for at least 2 hours to meld flavors.
  5. Serve chilled or at room temperature with dippers like fresh veggies or pita chips.
