Ingredients
  

  • 8 oz uncooked pasta penne or rigatoni recommended1 tablespoon olive oil10 oz Italian sausage (mild or spicy, casing removed)1 small onion, chopped1 red bell pepper, sliced1 yellow bell pepper, sliced3 cloves garlic, minced1/2 cup chicken broth1 cup heavy cream1/2 teaspoon Italian seasoningSalt and pepper, to tasteFresh parsley, chopped (for garnish)Freshly grated Parmesan cheese (optional)

Method
 

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon, about 5–6 minutes.
  3. Add the chopped onion and sliced bell peppers. Sauté for 5–7 minutes, or until vegetables are soft and slightly caramelized.
  4. Stir in the garlic and cook for 30 seconds, just until fragrant.
  5. Add the chicken broth, heavy cream, and Italian seasoning. Stir and let the sauce simmer for 5–7 minutes, until slightly thickened.
  6. Return the cooked pasta to the skillet and toss until evenly coated in the sauce. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and optional Parmesan cheese before serving.
