Method
 

Step-by-Step Instructions
  1. Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped fresh spinach and sauté for about 3-4 minutes until it wilts down.
  2. In the same skillet, add the minced garlic and cook for about 1 minute until it's fragrant.
  3. In a medium mixing bowl, blend the sour cream and cream cheese together until smooth. Fold in the shredded mozzarella cheese, grated Parmesan cheese, salt, and pepper.
  4. Gently fold the cooled spinach and garlic mixture into the creamy filling.
  5. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper. Arrange the cleaned whole mushrooms on the sheet.
  6. Fill each mushroom cap with the spinach and cheese mixture, pressing lightly to ensure they’re well packed.
