Ingredients
  

  • 2 large apples cored and diced
  • 1 cup shredded carrots
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts optional
  • 1/4 cup fresh parsley chopped
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the diced apples, shredded carrots, dried cranberries, and chopped walnuts (if using).
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
  3. Pour the dressing over the apple and carrot mixture and toss gently to coat all the ingredients evenly.
  4. Add the chopped parsley and toss again to combine.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled and enjoy!

Notes

  • For added crunch, consider substituting the walnuts with sunflower seeds or pumpkin seeds.
  • To make this salad vegan, replace the Greek yogurt with a plant-based yogurt alternative and use maple syrup instead of honey.
