- In a small mixing bowl, whisk together agave or maple syrup, yellow or Dijon mustard, a pinch of salt, and a dash of pepper. Set aside.
- Drain the tofu and wrap it in a clean towel. Press for about 10 minutes to extract excess moisture.
- Slice tofu into 1-inch thick strips.
- In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, and paprika. Gradually stir in water until smooth.
- Dip each tofu piece in the batter, then roll in panko bread crumbs.
- Preheat oven to 350°F (175°C) and arrange the tofu tenders on a lined baking tray. Bake for 30-35 minutes, flipping halfway through.
- Remove from oven and coat with the prepared sauce. Bake for an additional 5-8 minutes.
- Let cool for a few minutes, then serve hot.
