Ingredients
  

  • 3 pounds whole chicken cleaned and patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
  • 1 lemon juiced
  • 4 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 425°F.
  • In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper (if using).
  • Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
  • Drizzle the lemon juice over the chicken and stuff the cavity with the minced garlic.
  • Place the chicken breast-side up on a roasting pan or baking dish.
  • Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the skin is crispy and golden brown.
  • Let the chicken rest for 10-15 minutes before carving. Garnish with fresh parsley before serving.

  • For extra flavor, marinate the chicken in the spice mixture and lemon juice for a few hours or overnight in the refrigerator.
