Ingredients
  

  • 3 pounds whole chicken cleaned and patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
  • 1 lemon juiced
  • 4 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F.
  2. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne pepper (if using).
  3. Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
  4. Drizzle the lemon juice over the chicken and stuff the cavity with the minced garlic.
  5. Place the chicken breast-side up on a roasting pan or baking dish.
  6. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the skin is crispy and golden brown.
  7. Let the chicken rest for 10-15 minutes before carving. Garnish with fresh parsley before serving.

  • For extra flavor, marinate the chicken in the spice mixture and lemon juice for a few hours or overnight in the refrigerator.
